How to cook rafaello at home

Rafaello is considered to be an exquisite dessert. Delicate taste and soft texture will not leave indifferent even the most sophisticated connoisseur of sweets. Candies are approved by children and adults; young people give rafaello to their ladies as a sign of love and devotion. After the time expired, experienced housewives developed a lot of recipes for making delicacies at home. Technology can not be called complex, but, as in any other case, there are some peculiarities that must be considered.

 How to make rafaello

Candy "Raffaello": a classic

There is a single basic recipe for making sweets at home. The total time spent on mixing the ingredients and creating a masterpiece will take you 1.5-2 hours. The level of complexity of the dish is “medium”, the calorie content is quite high, but its taste is fully justified.

  • coconut chips - 1 cup with a volume of 300 ml.
  • condensed milk - 150 ml.
  • Almonds (cashews, walnuts, to choose from) - 15–20 pcs.

  1. Pour the condensed milk into the bowl, add 1/6 of the coconut chips. Optionally, you can replace it with chopped cornflakes or chopsticks, as well as wafer chips. After adding the composition must be mixed with a fork or a mixer.
  2. Next, cover the resulting mass with food film or wrap a plastic bag, send it in the fridge, wait 40-60 minutes. No need to open the film and regularly check the composition, let it brew. Ideally cooked filling - solid, thick.
  3. After the expiration date, remove the mass, scoop up a small amount with a tablespoon, roll the ball. Perform similar manipulations with each section of the cream, give it a shape by hand.
  4. Peel and fry in a dry nonstick frying pan with almonds (you can substitute cashews or walnuts). Take 1 nut, stick it in the center of the ball, slide your finger deep into it. Roll the candy in your hands on a flat surface to seal the hole. Form in a similar way balls from the rest of the mass.
  5. Pour in a bowl of coconut chips, roll in it all the candy.Line a tray or other flat dish with food foil, put ready rafaelki on it. When all the candies are ready, put the tray in the fridge for final freezing.

Important!
Rafaello’s classic recipes should be kept cold. With prolonged exposure to room temperature, they begin to melt, losing their characteristic dense texture. Get a treat just before serving.

"Raffaello" with mascarpone: the original

Technology cooking rafaello with mascarpone as close as possible to the original. All ingredients are designed to create a masterpiece of Italian technology, but it is not always possible to get the original products. The recipe is suitable for people living in a big city, where there are hypermarkets nearby.

In advance, take care of the purchase of wafer hemispheres, into which the filling will be poured. They are not always on sale. Optionally, you can replace the component with round canapés.

  • Cream cheese “Mascarpone” - 165 gr.
  • condensed milk - 90 ml.
  • coconut flakes - 110 gr.
  • Almonds - 45-50 gr.
  • wafer hemispheres - 46 pcs.
  • liquid cream (fat content 18-25%) - 45 ml.
  • white porous chocolate - 160 gr.
  1. Prepare a deep bowl, put the Mascarpone cheese (you can replace the creamy Hochland). Pour in condensed milk, start to slowly beat with a mixer, gradually increasing the speed. Bring a lot to a lush thick state, in the end you should get an air cream.
  2. Break 60 gr. of porous chocolate on the squares, place it in an enamel saucepan and melt it in a water bath, stirring constantly. Reduce heat to min., Add 25 ml. cream, simmer another 5 minutes.
  3. After the expiration date cool, add the melted chocolate to the air cream, whisk again with a mixer. Send the mass in the refrigerator for 1-1.5 hours, after covering with cling film or foil.
  4. When the filling is cool enough, distribute it over the wafer hemispheres. Insert the almond nut into the center of the circle with the end face, so that it captures two parts at once after their connection. Fasten the halves together. Important! Do not confuse hemispheres with forms for nuts with condensed milk. The last option is made from dense sand dough, and you need exactly thin forms on a waffle base.
  5. After combining the parts together, proceed to the final stage of preparation. Break the remaining 100 gr. white chocolate into small pieces, melt them in a water or steam bath. Add 20 ml. liquid cream, boil the mixture for 5 minutes.
  6. Next, you need to cool the composition, then dip the waffle ball into it and immediately sprinkle with coconut chips. Manipulations are carried out with each candy in turn. After forming, wrap the rafaelka in food foil so that the wafer does not soften or fall apart.
  7. Put on a tray all the candies in one row, send in the freezer for 1-1.5 hours. Before serving, first pull out the balls and let them lie at room temperature for a quarter of an hour.

Important!
You can serve rafaello to the table immediately after removal from the freezer, but then the candy will resemble ice cream.

Strawberry "Raffaello" with cottage cheese

Of course, this recipe is practically nothing like the purchased candy, but it is no less tasty. The cooking option is suitable for the summer season when there is an opportunity to purchase fresh strawberries.If you wish, you can replace them with raspberries, currants or blackberries, experiment.

 Strawberry Raffaello with Curd

  • cottage cheese (fat content 5-9%) - 265 gr.
  • butter - 40 g.
  • granulated sugar (preferably cane) - 125 gr.
  • chicken egg - 1 pc.
  • rye flour - 140 gr.
  • fresh strawberries (or other berries) - 200-225 gr.
  • breadcrumbs - 50 gr.
  • coconut chips - 60 gr.

  1. Beat the egg with a mixer in such a way that a dense dense foam is obtained (the mass must rise 1.5-2 times). Begin slowly pouring the sugar, while keeping the mixer at minimum speed. Continue the manipulations until the sugar crystals are completely dissolved.
  2. When the mass becomes homogeneous, add flour and whisk again. Take care that no lumps form. Pass the curd through a sieve or use a paste-like composition, add it to the bulk.
  3. Knead the cottage cheese dough with your hands, then grease the palm in flour, pinch off a piece and roll the ball. Then press it between your palms to make a flatbread.
  4. Wash and dry the strawberries, remove the legs and leaves. Cut the berries into 2 or 4 pieces so that they fit in the center of the dough. After that re-form the ball.
  5. Pour filtered water into a saucepan, put on the stove and bring to a boil.Send in the capacity of the preparation of sweets by the type of cooking dumplings. Wait until the products float to the surface, then boil them for another 3-5 minutes.
  6. After that, get the candy with a slotted spoon, put it on a cotton towel, so that the glass has excess moisture (wait about 2 minutes). Then dip hot raffaello in a mixture of breadcrumbs and coconut chips, roll well.
  7. Wrap the candy in food foil, put it on a flat dish and place in the refrigerator for 2-3 hours. Optionally, before serving, decorate each rafaelku with whipped cream and a quarter of strawberries.

Important!
"Raffaello", prepared with the addition of strawberries can be mixed with creamy or chocolate ice cream. In this case, pre-cut the candy in half, decorate them with the top of the dessert.

It is easy to cook "Raffaello" at home, if you have sufficient knowledge regarding incoming components. Use the recipe with the filling of tender cream cheese "Mascarpone" (original) or condensed milk (classic). Consider adding strawberries, raspberries, or almonds.Experiment, increase or decrease the volume, keeping the proportions.
