Halva has long been famous for its beneficial properties and energy value. Experienced housewives through trial and error brought the most delicious cooking technology. Halvah can be made from sunflower seeds, walnuts, honey, peanuts. However, like any other matter, there are some peculiarities that need to be taken into account. Consider the important aspects in order.
Halva from sunflower seeds
- sunflower seeds - 450 gr.
- wheat flour - 300 gr.
- granulated sugar - 80 gr.
- drinking water - 160 ml.
- vegetable oil - 75 ml.
- vanilla sugar - 12 gr.
- Peel the sunflower seeds. Prepare a frying pan with a non-stick coating, pour the raw materials there, fry without adding vegetable oil.
- Send the fried raw materials to the grinder, coffee grinder or blender, skip the seeds a few times to get fine grained grits.
- Wash and dry the pan, heat it, add the previously sifted flour. Fry until golden brown (again, without vegetable oil).
- Take a pan, pour filtered water, add granulated sugar and vanillin. Put on the fire, bring to complete dissolution of the crystals.
- Pour into the resulting syrup, sunflower oil, add sunflower seeds passed through a blender, fried flour. Stir the mixture thoroughly with a fork or wooden spatula.
- Prepare a plastic, aluminum or silicone baking dish. Spread it with parchment paper or grease with oil.
- Tamp the compound tightly into the mold, pressing it layer by layer. Send the future halva in the fridge until the final freezing (2-3 hours).
Oatmeal halva
- oat flour - 85 gr.
- honey - 65 gr.
- drinking water - 60 ml.
- vegetable oil - 40 ml.
- sunflower seeds - 210 gr.
- Prepare a small enameled pan, mix honey and drinking water in it, put it on the stove. Tomit before the first bubbles appear, but do not boil. As soon as the honey has melted, the syrup is ready.
- Wash and dry the pan with a non-stick coating.Pour the oatmeal, fry to a caramel shade without butter. You will feel a subtle nutty flavor, at this very moment flour can be removed from the stove.
- Now pour in vegetable oil to it, mix, put the container aside. At this time, fry the sunflower seeds in an oil-free frying pan, then skip them through the blender several times.
- Combine the ground seeds with flour, send the mass to the pan. Roast about 5-7 minutes, stirring constantly, then pour the honey-based syrup.
- Prepare the molds, lubricate them with oil, put the mass into the cavity. Cover with parchment paper, put a heavy bottle on top, which will serve as a press. Send the halva in the fridge for 5 hours.
Halva on the basis of condensed milk
- condensed milk - 55 gr.
- sunflower seeds - 165 gr.
- wheat flour - 30 gr.
- granulated sugar - 45 gr.
- vegetable oil (unrefined) - 40 ml.
- Take a thick-bottomed or non-stick frying pan, heat it on the stove, expose a small fire. Pour the seeds, fry them to a golden hue. After roasting, place the seeds in a blender or meat grinder, scroll several times to the state of finely ground cereal.
- Send granulated sugar to the pan, cover with a small amount of water and wait for the crystals to completely dissolve. Pour the fried seeds with syrup, add flour to make it thick. Stir until the clumps are completely removed.
- Mix the resulting mass with condensed milk and sunflower oil. Wrap the mass in gauze, folded in several layers. Place on a plate and press down with a heavy bottle. Send in the refrigerator until complete curing (3-4 hours).
Peanut Halva
- peanuts (raw or roasted) - 480 gr.
- cane sugar - 240 gr.
- Wheat flour - 360 gr.
- drinking water - 80 ml.
- vanilla sugar - 12 gr.
- If you have purchased raw peanuts, you must conduct a preliminary heat treatment. To do this, put the nuts in a non-stick frying pan, put on a slow fire and stir for 7 minutes. After that, send the nuts into a blender, meat grinder or coffee grinder, turning the composition into finely ground grits.
- Now fry the wheat flour (you can replace rye) until golden brown in a non-stick pan, do not add oil, the dishes should be dry.
- Mix the granulated sugar, vanillin and water in one mass, pour into a saucepan and simmer over low heat. Do not stick, constantly stir the composition. When the granules dissolve, the syrup can be considered ready.
- Combine peanut cereals, fried flour and syrup into one mixture, pour in vegetable oil according to proportions. Stir to a uniform consistency as much as possible.
- Prepare a form of plastic, aluminum or silicone, send halva there. Compress with a heavy bottle, send to the refrigerator for 4 hours.
Chocolate halva
- raw peanuts - 460 gr.
- rye flour - 380 gr.
- vanillin - 10-15 gr.
- dark chocolate - 60 gr.
- sunflower oil - 220 ml.
- granulated sugar - 240 gr.
- filtered water - 100 ml.
- Fry the peanuts in a pan without the infusion of vegetable oil. When the fruit turns brown, turn off the hob. Crush peanuts into dust using a blender or meat grinder. Now fry rye flour in a dry skillet, it should get a caramel tint.
- Mix flour with peanuts, add vanilla. In a separate bowl, melt the chocolate, then pour in the vegetable oil to it, stir to a uniform consistency.
- Boil beet sugar and water syrup. When the granules dissolve, pour the resulting composition to the melted chocolate and nuts with flour. Prepack the mass in molds, put in the refrigerator for 2 hours.
Walnut Halva
- peeled walnut kernels - 165 gr.
- Butter (fat content 72%) - 120 gr.
- sugar beet - 210 gr.
- milk (fat content of 3.2) - 410 ml.
- corn starch - 15 gr.
- Prepare a pot with enamel coating. Pour milk into the container, add sugar, bring the mass to a boil. As soon as the first bubbles appear, reduce the power, cook the composition for another 10 minutes.
- Slowly pour corn starch into the pre-cooled syrup and stir at the same time so that no lumps form. Again put on fire, languish for 10 minutes.
- Cut the butter into cubes, melt in a non-stick frying pan. Chop walnuts into small pieces, fry in butter until dark brown.
- After that, move the nuts into a thick-walled pan, cover with milk syrup, cork. Turn on the burner on a slow fire, boil the mixture for 25 minutes.Serve the finished product hot.
